- 2 small eggs
- 2 tablespoons fresh tomato sauce
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon canola oil
Salt to taste
Whisk together the eggs, parsley, and salt.
Heat up the oil in a large skillet over a medium fire.
Pour in the egg mixture, swirling to ensure that it covers the entire base of the pan. Allow it to fry until it is well set.
Transfer the fried egg onto a plate and spread the tomato sauce over its surface.
Fold the sides of the egg toward the center, similar to an omelet.
Serve warm with a cool glass of orange juice.
